Almond & Oat Energy Balls



These delicious energy balls do not last long in our house, especially when my daughter Iris finds out they are stashed in the freezer! These are a quick and easy on the go, pre or post workout snack and are super easy to make. Well that last part depends on the baker (I royally messed up making these, my wife is a rockstar when it comes to baking). Give these energy balls a try and I gaurentee you will be adding them regularly to your busy life.


Ps. it is advised to Triple the recipe. They will go fast!


Ingredients:


- 1 cup of Gluten Free rolled oats

- 1/3 cup almonds, chopped

- 1/3 cup sweetened shredded coconut

- 1 Tbsp ground flax seed

- 1/2 cup of Almond Butter

- 1/4 cup of honey

- 1 Tbsp chia seeds

- 1/3 cup of craisins


- 1/3 cup dark chocolate chips


Directions


- Bake the oatmeal, almonds and coconut for 8-10 min at 350 F. Once down let cool

- Melt the almond butter if it needs to be

- In a large bowl stir in the baked mixed & all other ingredients. Form into small balls and then put in the fridge.
